Giardiniera is an Italian relish of pickled vegetables in vinegar and oil. The exact translation of the word is gardener. It is usually eaten as an antipasto, with cured meats or cheese, and sometimes added to salads. Giardiniera is unpasteurised, which means it continues to ferment and retain all of the good bacteria for maximum health benefits!

In Chicago, giardiniera is often used as a pizza topping and in New Orleans it is added to subs. It can be folded through potato or pasta salad and served with hard and soft cheeses, especially mozzarella. Grissini and focaccia are great for soaking up the delicious extra virgin olive oil.
